Stuffed Breast of Chicken with Garlic & Chive Cheese Wrapped in Parma Ham

Recipe

  • 4 Supremes of chicken
  • 8 slices of Parma Ham
  • 100gm garlic and chive cheese
  • Olive oil
  • ¾ pint red wine sauce

Method

  1. Wash the chicken supremes and pat dry with kitchen paper.
  2. Keep the joins of the ham on the underside of the chicken supreme.
  3. Place the 4 pieces of chick on to a lightly oiled tray, drizzle a little oil on the top and roast in a medium oven – gas mark 6-7 or 180oC for 15-20 minutes or until the juices run clear.
  4. Allow the supremes to rest for 5 minutes then cut into 2-3 slices, present on a red wine sauce.
