Garlic and Chive Cheddar Scones

Buttermilk gives these cheesy scones a hint of acidy and helps them to rise!

INGREDIENTS

300g Laxey Glen Mills self raising flour

1.5 tsp baking powder

80g cold butter grated 

150g IOM Creamery Garlic and Chive Cheddar

200g Buttermilk

Plain flour for dusting

1 medium egg 

METHOD

1) Preheat the oven to 180°C

2) Tip the flour and baking powder into a large bowl. 

3) Grate the butter into the bowl and rub with fingertips until it looks like fine crumbs

4) Finely grate 130g of garlic and chive cheddar into the bowl and mix

5) Make a well in the centre and add the buttermilk. Stir into the dry ingredients to make a dough - add more buttermilk if it feels dry 

6) Tip onto a work surface that has been dusted with plain flour

7) roll to 2cm thick and use a 7cm cutter to cut rounds until you have used all of the dough 

8) Space on preheated baking trays and brush with beaten egg. Grate over the remaining 20g of cheese

9) Bake for 30 minutes until golden and risen 

10) Enjoy with Isle of Man Creamery butter!
