Banana oat muffins

Who doesn't love a muffin! And with all the good stuff in these you can give them to your children happy in the knowledge you're filling their little tummies with lovely fresh local produce that's good for them!

INGREDIENTS

200g self raising flour
150g porridge oats
50g desiccated coconut
2 tbsp honey (no honey under 1's – sub with agave or maple syrup)
1 tsp cinnamon
4 small (or 3 larger) black bananas, mashed
1 large free range Manx egg 
3 tbsp sunflower oil
250ml Isle of Man Creamery milk
sunflower seeds
pumpkin seeds

METHOD

1) Preheat oven to 200c

2) Mash bananas in a bowl

3) Stir together all dry ingredients

4) Pour on wet ingredients and mix well

5) Divide into silicone moulds in a muffin tray and sprinkle on the seeds

6) Bake for 20-25 mins depending on size of muffins

7) cool and eat or store in airtight container for about 3 days
