Cheese Flapjacks

These cheese flapjacks were the 'go-to' when Libby was weaning her toddlers, both her four and two year old LOVE them and they are so quick and easy to make. Their also freeze really well so are great to make in advance for a quick, filling meal. And they're a great way to sneak veggies into even the most veggie-hating child!

INGREDIENTS

300g porridge oats.
350g Isle of Man creamery cheese (grated) I like to use Red Leicester - but any cheese will do
100g Isle of Man creamery butter
2 eggs
Optionally add 200-300g of grated courgettes, carrots, sweet potato etc

METHOD

1) Preheat oven to 180c

2) Melt butter in pan then stir in oats, eggs, cheese (and veg if adding)

3) Put into a baking tin and push down with spoon. Flapjacks should be about 1/2 inch thick

4) Bake for 20 mins until brown 

5) Cut into about 30 pieces and transfer to cooling rack.
